Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Red onion - 50 grams (1/4 medium, finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 30 grams (1/2 cup, chopped)
  • Sumac - 1 tablespoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour - 50 grams (1/3 cup, all-purpose or chickpea flour)
  • Olive oil - 2 tablespoons (for frying)
  • Pita bread or burger buns - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1 medium (sliced)
  • Cucumber - 1 small (sliced)

Steps

  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the chopped red onion, minced garlic, chopped parsley, sumac, cumin, coriander, salt, and black pepper to the mashed chickpeas. Mix well to combine.
  3. Gradually add the flour to the mixture, stirring until a cohesive dough forms. If the mixture is too wet, add a bit more flour.
  4. Divide the mixture into two equal portions and shape them into patties.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown.
  6. While the patties are cooking, prepare the pita bread or buns by warming them in a separate pan or microwave.
