- Red onion - 50 grams (1/4 medium, finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 30 grams (1/2 cup, chopped)
- Sumac - 1 tablespoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flour - 50 grams (1/3 cup, all-purpose or chickpea flour)
- Olive oil - 2 tablespoons (for frying)
- Pita bread or burger buns - 2 pieces
- Lettuce - 2 leaves
- Tomato - 1 medium (sliced)
- Cucumber - 1 small (sliced)
Steps
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the chopped red onion, minced garlic, chopped parsley, sumac, cumin, coriander, salt, and black pepper to the mashed chickpeas. Mix well to combine.
- Gradually add the flour to the mixture, stirring until a cohesive dough forms. If the mixture is too wet, add a bit more flour.
- Divide the mixture into two equal portions and shape them into patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown.
- While the patties are cooking, prepare the pita bread or buns by warming them in a separate pan or microwave.
- Assemble the burger by placing each chickpea patty on the bread, and topping with lettuce, tomato slices, and cucumber.
