- Cooked green lentils - 1 cup
- Red onion, finely chopped - 1/4 cup
- Garlic, minced - 2 cloves
- Fresh parsley, chopped - 1/4 cup
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Sumac - 1 tablespoon
- Chickpea flour - 1/4 cup
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pita bread - 2 pieces
- Tomato, sliced - 1 medium
- Cucumber, sliced - 1 small
- Tahini - 2 tablespoons
- Fresh lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine cooked lentils, chopped onion, minced garlic, parsley, cumin, coriander, sumac, chickpea flour, olive oil, salt, and pepper. Mix until well combined.
- Form the mixture into 2 burger patties.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add a little water if needed to achieve a pourable consistency.
- Warm the pita bread in a dry skillet for about 1 minute on each side.
- Assemble the burger by placing a lentil patty in each pita, topped with sliced tomatoes and cucumbers. Drizzle with tahini sauce before serving.
