Ingredients

  • Cooked green lentils - 1 cup
  • Red onion, finely chopped - 1/4 cup
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 1/4 cup
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Sumac - 1 tablespoon
  • Chickpea flour - 1/4 cup
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Tomato, sliced - 1 medium
  • Cucumber, sliced - 1 small
  • Tahini - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine cooked lentils, chopped onion, minced garlic, parsley, cumin, coriander, sumac, chickpea flour, olive oil, salt, and pepper. Mix until well combined.
  2. Form the mixture into 2 burger patties.
  3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  4. While the patties are cooking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add a little water if needed to achieve a pourable consistency.
  5. Warm the pita bread in a dry skillet for about 1 minute on each side.
  6. Assemble the burger by placing a lentil patty in each pita, topped with sliced tomatoes and cucumbers. Drizzle with tahini sauce before serving.
