Ingredients

  • Sujuk - 150 grams
  • Eggs - 4 large
  • Olive oil - 2 tablespoons

  • Bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the finely chopped onion and sauté for 2-3 minutes until translucent.
  3. Slice the sujuk into thin rounds and add to the skillet, cooking for 5-7 minutes until browned.
  4. Add the diced bell pepper and tomato, cooking for an additional 3-4 minutes until softened.
  5. Season the mixture with salt and black pepper to taste.
  6. Make four small wells in the mixture and crack an egg into each well.
  7. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
  8. Remove from heat, garnish with fresh parsley, and serve hot.
