Stuffed Squid

Ingredients

  • 2 medium-sized squid tubes
  • 100 grams of short-grain rice
  • 1 small onion - finely chopped
  • 2 cloves of garlic - minced
  • 50 grams of cherry tomatoes - diced
  • 2 tablespoons of pine nuts
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of paprika
  • Salt - to taste
  • Black pepper - to taste
  • 2 tablespoons of fresh parsley - chopped
  • 1 tablespoon of fresh mint - chopped
  • Juice of 1 lemon

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes and drain.
  2. In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced cherry tomatoes, and pine nuts to the pan. Sauté for another 3-4 minutes until the tomatoes soften.
  4. Stir in the soaked rice, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well and cook for 2 minutes.
  5. Add 200ml of water to the rice mixture and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it cool slightly.
  6. Once cooled, stir in the chopped parsley, mint, and lemon juice into the rice mixture.
  7. Preheat the oven to 180°C (350°F). Stuff each squid tube with the rice mixture, packing it tightly but leaving a little space at the top.
  8. Place the stuffed squid on a baking dish and drizzle with olive oil. Bake in the preheated oven for 15-20 minutes until the squid is tender.
  9. Remove from the oven, slice the stuffed squid into rings, and serve warm with a drizzle of lemon juice.
