Stuffed Squid

Ingredients
- 2 medium-sized squid tubes
- 100 grams of short-grain rice
- 1 small onion - finely chopped
- 2 cloves of garlic - minced
- 50 grams of cherry tomatoes - diced
- 2 tablespoons of pine nuts
- 2 tablespoons of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of paprika
- Salt - to taste
- Black pepper - to taste
- 2 tablespoons of fresh parsley - chopped
- 1 tablespoon of fresh mint - chopped
- Juice of 1 lemon
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes and drain.
- In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced cherry tomatoes, and pine nuts to the pan. Sauté for another 3-4 minutes until the tomatoes soften.
- Stir in the soaked rice, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well and cook for 2 minutes.
- Add 200ml of water to the rice mixture and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it cool slightly.
- Once cooled, stir in the chopped parsley, mint, and lemon juice into the rice mixture.
- Preheat the oven to 180°C (350°F). Stuff each squid tube with the rice mixture, packing it tightly but leaving a little space at the top.
- Place the stuffed squid on a baking dish and drizzle with olive oil. Bake in the preheated oven for 15-20 minutes until the squid is tender.
- Remove from the oven, slice the stuffed squid into rings, and serve warm with a drizzle of lemon juice.
