- Cooked rice - 100 grams
- Canned grape leaves - 200 grams, drained and rinsed
- Chickpeas - 100 grams, cooked and mashed
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Whole wheat burger buns - 2
- Hummus - 4 tablespoons (for serving)
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
Steps
- In a large bowl, combine the cooked rice, mashed chickpeas, chopped onion, minced garlic, parsley, mint, cumin, paprika, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Take a grape leaf, place about 2 tablespoons of the mixture at the base, fold in the sides, and roll tightly. Repeat with remaining grape leaves until the filling is used up.
- Heat olive oil in a skillet over medium heat. Carefully place the stuffed grape leaves seam side down in the skillet and cook for about 5 minutes, turning occasionally until golden brown.
- While the grape leaves are cooking, toast the whole wheat burger buns until lightly golden.
- Assemble the burgers by spreading 2 tablespoons of hummus on each bun, then add the cooked grape leaves burger on top.
- Top with sliced tomatoes and cucumbers, and serve immediately.
