Ingredients
- Cooked brown rice - 100 grams
- Cooked green lentils - 100 grams
- Fresh grape leaves - 10 leaves
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Vegan yogurt or tahini - for serving
- Sliced tomatoes - for garnish
- Lettuce leaves - for garnish
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- In a bowl, combine the cooked brown rice, cooked green lentils, sautéed onion and garlic, chopped parsley, chopped mint, lemon juice, cumin, salt, and black pepper. Mix well.
- Lay a grape leaf on a flat surface, vein side up, and place about 2-3 tablespoons of the rice-lentil mixture at the base of the leaf. Fold in the sides and roll it up tightly. Repeat with remaining leaves and filling.
- In the same skillet, place the stuffed grape leaves seam side down and add a little water (about 50 ml) to the pan. Cover and simmer for 15-20 minutes until the leaves are tender.
- While the grape leaves are cooking, toast the burger buns in a separate pan with the remaining olive oil until golden.
- Once the grape leaves are done, remove them from the skillet and let them cool slightly.
- To assemble, place a few stuffed grape leaves on the bottom half of each toasted bun, add sliced tomatoes and lettuce, and top with vegan yogurt or tahini. Close the burgers with the top half of the bun.
