- Fresh spinach - 200 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Potato - 1 medium, peeled and diced
- Vegetable broth - 500 milliliters
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and cumin, cooking for another minute until fragrant.
- Stir in the diced potato and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes until the potato is tender.
- Add the fresh spinach to the pot and cook for an additional 5 minutes until wilted.
- Remove the pot from heat and use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
- Stir in the lemon juice, salt, and black pepper. Adjust seasoning to taste.
- Serve hot, garnished with fresh parsley.
