Ingredients

  • Fresh spinach - 200 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Potato - 1 medium, peeled and diced
  • Vegetable broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and cumin, cooking for another minute until fragrant.
  3. Stir in the diced potato and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes until the potato is tender.
  4. Add the fresh spinach to the pot and cook for an additional 5 minutes until wilted.
  5. Remove the pot from heat and use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
  6. Stir in the lemon juice, salt, and black pepper. Adjust seasoning to taste.
  7. Serve hot, garnished with fresh parsley.
