Ingredients
- All-purpose flour - 250 grams
- Water - 120 ml
- Olive oil - 30 ml
- Salt - 5 grams
- Fresh spinach - 300 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Fresh parsley - 20 grams, chopped
- Fresh mint - 10 grams, chopped
- Lemon juice - 15 ml
- Black pepper - 2 grams
- Sumac - 3 grams
- Feta cheese - 50 grams, crumbled
Steps
- In a mixing bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a dough forms. Knead for about 5 minutes until smooth, then cover and let it rest for 20 minutes.
- While the dough rests, rinse the spinach and chop it coarsely. In a skillet, heat a little olive oil over medium heat and sauté the chopped onion until translucent.
- Add the spinach to the skillet and cook until wilted, about 5 minutes. Remove from heat and let cool slightly.
- Once cooled, add the parsley, mint, pine nuts, lemon juice, black pepper, sumac, and crumbled feta cheese to the spinach mixture. Mix well and adjust seasoning if necessary.
- Preheat the oven to 200°C (400°F). Roll out the dough on a floured surface to about 2-3 mm thick. Cut into circles approximately 15 cm in diameter.
- Place a generous spoonful of the spinach filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing them together.
- Place the filled pies on a baking sheet lined with parchment paper. Brush the tops with a little olive oil.
- Bake in the preheated oven for about 20-25 minutes, or until golden brown. Serve warm.
