Ingredients

  • All-purpose flour - 250 grams
  • Water - 120 ml
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Fresh spinach - 300 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Lemon juice - 15 ml
  • Black pepper - 2 grams
  • Sumac - 3 grams
  • Feta cheese - 50 grams, crumbled

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a dough forms. Knead for about 5 minutes until smooth, then cover and let it rest for 20 minutes.
  2. While the dough rests, rinse the spinach and chop it coarsely. In a skillet, heat a little olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the spinach to the skillet and cook until wilted, about 5 minutes. Remove from heat and let cool slightly.
  4. Once cooled, add the parsley, mint, pine nuts, lemon juice, black pepper, sumac, and crumbled feta cheese to the spinach mixture. Mix well and adjust seasoning if necessary.
  5. Preheat the oven to 200°C (400°F). Roll out the dough on a floured surface to about 2-3 mm thick. Cut into circles approximately 15 cm in diameter.
  6. Place a generous spoonful of the spinach filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing them together.
  7. Place the filled pies on a baking sheet lined with parchment paper. Brush the tops with a little olive oil.
  8. Bake in the preheated oven for about 20-25 minutes, or until golden brown. Serve warm.
