Ingredients

  • Fresh spinach - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Chickpeas - 200 grams, cooked and mashed
  • Whole wheat flour - 50 grams
  • Baking powder - 1/2 teaspoon
  • Water - 2 tablespoons
  • Pita bread or burger buns - 2 pieces
  • Tahini sauce - for serving

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the fresh spinach to the skillet and cook until wilted. Remove from heat and let it cool slightly.
  3. In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, chopped parsley, cumin, salt, and black pepper. Mix well.
  4. In another bowl, mix the mashed chickpeas, whole wheat flour, baking powder, and water until a dough forms. If the mixture is too sticky, add a little more flour.
  5. Divide the chickpea dough into 2 equal portions and flatten them into burger patties.
  6. Heat the remaining tablespoon of olive oil in the skillet over medium-high heat. Cook the chickpea patties for about 4-5 minutes on each side until golden brown.
  7. While the patties are cooking, warm the pita bread or burger buns in a separate pan or oven.
  8. Assemble the burgers by placing a chickpea patty in the pita or bun, adding a generous scoop of the spinach filling, and drizzling with tahini sauce.
