Ingredients
- Fresh spinach - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Chickpeas - 200 grams, cooked and mashed
- Whole wheat flour - 50 grams
- Baking powder - 1/2 teaspoon
- Water - 2 tablespoons
- Pita bread or burger buns - 2 pieces
- Tahini sauce - for serving
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the fresh spinach to the skillet and cook until wilted. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, chopped parsley, cumin, salt, and black pepper. Mix well.
- In another bowl, mix the mashed chickpeas, whole wheat flour, baking powder, and water until a dough forms. If the mixture is too sticky, add a little more flour.
- Divide the chickpea dough into 2 equal portions and flatten them into burger patties.
- Heat the remaining tablespoon of olive oil in the skillet over medium-high heat. Cook the chickpea patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, warm the pita bread or burger buns in a separate pan or oven.
- Assemble the burgers by placing a chickpea patty in the pita or bun, adding a generous scoop of the spinach filling, and drizzling with tahini sauce.
