Ingredients
- All-purpose flour - 250 grams
- Warm water - 120 ml
- Olive oil - 30 ml
- Active dry yeast - 5 grams
- Salt - 5 grams
- Fresh spinach - 200 grams, chopped
- Onion - 1 medium, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Lemon juice - 15 ml
- Salt - 5 grams
- Black pepper - 2 grams
- Sumac - 3 grams
Steps
- In a bowl, combine warm water, yeast, and 5 grams of sugar. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour and 5 grams of salt. Make a well in the center and add the yeast mixture and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- While the dough is rising, heat a little olive oil in a pan over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
- Add the chopped spinach, parsley, mint, lemon juice, 5 grams of salt, black pepper, and sumac to the pan. Cook for another 5-7 minutes until the spinach is wilted and the mixture is well combined. Remove from heat and let it cool.
- Preheat your oven to 200°C (392°F).
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a circle about 10 cm in diameter.
- Place a spoonful of the spinach mixture in the center of each circle. Fold the dough over to form a triangle, pinching the edges to seal tightly.
- Place the fatayers on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
