Ingredients

  • Red bell pepper - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Harissa paste - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a medium pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Stir in the minced garlic and chopped red bell pepper, cooking for an additional 2-3 minutes until fragrant.
  3. Chop the fresh tomatoes and add them to the pot. Cook for 5-7 minutes until they break down slightly.
  4. Add the vegetable broth, harissa paste, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  5. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the lemon juice and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
