- Vegetable broth - 500 milliliters
- Harissa paste - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat olive oil in a medium pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic and chopped red bell pepper, cooking for an additional 2-3 minutes until fragrant.
- Chop the fresh tomatoes and add them to the pot. Cook for 5-7 minutes until they break down slightly.
- Add the vegetable broth, harissa paste, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the lemon juice and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
