Ingredients

  • Potatoes - 400 grams
  • Red bell pepper - 1 medium, diced
  • Green chili - 1 medium, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Wash and peel the potatoes, then cut them into bite-sized cubes.
  2. Place the potato cubes in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until tender but not mushy.
  3. While the potatoes are cooking, prepare the dressing by mixing olive oil, lemon juice, minced garlic, ground cumin, salt, and black pepper in a bowl.
