- Potatoes - 400 grams
- Red bell pepper - 1 medium, diced

- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 1 clove, minced
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Wash and peel the potatoes, then cut them into bite-sized cubes.
- Place the potato cubes in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until tender but not mushy.
