Ingredients

  • Green or brown lentils - 150 grams
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 1 small, finely chopped
  • Parsley - 30 grams, chopped
  • Mint - 15 grams, chopped
  • Olive oil - 3 tablespoons
  • Fresh lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the lentils under cold water and place them in a pot with 600 ml of water. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until tender.
  2. Once cooked, drain the lentils and let them cool for a few minutes.
  3. In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, ground cumin, cayenne pepper, salt, and black pepper.
  5. Add the cooled lentils to the vegetable mixture, then pour the dressing over the salad and toss gently to combine.
  6. Adjust seasoning to taste and serve immediately, or refrigerate for 30 minutes to allow flavors to meld.
