- Green or brown lentils - 150 grams
- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1, diced
- Red onion - 1 small, finely chopped
- Parsley - 30 grams, chopped
- Mint - 15 grams, chopped
- Olive oil - 3 tablespoons
- Fresh lemon juice - 2 tablespoons
- Garlic - 1 clove, minced
- Ground cumin - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon (adjust to taste)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the lentils under cold water and place them in a pot with 600 ml of water. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until tender.
- Once cooked, drain the lentils and let them cool for a few minutes.
- In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint.
- In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, ground cumin, cayenne pepper, salt, and black pepper.
- Add the cooled lentils to the vegetable mixture, then pour the dressing over the salad and toss gently to combine.
- Adjust seasoning to taste and serve immediately, or refrigerate for 30 minutes to allow flavors to meld.
