Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large bowl, combine the minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, salt, black pepper, olive oil, chopped parsley, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat a grill or barbecue to medium-high heat.
  4. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally until the lamb is browned and cooked to your desired level of doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
