Steps
- In a large mixing bowl, combine the ground lamb, minced garlic, cumin, coriander, cayenne pepper, paprika, salt, black pepper, and chopped parsley. Mix thoroughly until well combined.
- Form the lamb mixture into 2 equal-sized patties, about 1.5 cm thick.
- Heat the olive oil in a grill pan or skillet over medium heat. Once hot, cook the lamb patties for about 5-6 minutes on each side or until they reach an internal temperature of 70°C (160°F).
- While the patties are cooking, slice the zucchini into thick rounds and grill or sauté them for about 3-4 minutes on each side until tender and golden brown.
- In a small bowl, whisk together tahini, lemon juice, and water to create a smooth sauce. Adjust the consistency with more water if necessary.
- To assemble the burgers, place a grilled zucchini round on a plate, add a lamb patty, and top with lettuce, tomato slices, and red onion. Drizzle with tahini sauce.
- Finally, top with another zucchini round to complete the burger. Serve immediately.
