  • Tahini - 2 tablespoons (for sauce)
  • Lemon juice - 1 tablespoon (for sauce)
  • Water - 1 tablespoon (for sauce)
  • Lettuce leaves - 4 (for serving)
  • Tomato - 1, sliced (for serving)
  • Red onion - 1/2 small, thinly sliced (for serving)

Steps

  1. In a large mixing bowl, combine the ground lamb, minced garlic, cumin, coriander, cayenne pepper, paprika, salt, black pepper, and chopped parsley. Mix thoroughly until well combined.
  2. Form the lamb mixture into 2 equal-sized patties, about 1.5 cm thick.
  3. Heat the olive oil in a grill pan or skillet over medium heat. Once hot, cook the lamb patties for about 5-6 minutes on each side or until they reach an internal temperature of 70°C (160°F).
  4. While the patties are cooking, slice the zucchini into thick rounds and grill or sauté them for about 3-4 minutes on each side until tender and golden brown.
  5. In a small bowl, whisk together tahini, lemon juice, and water to create a smooth sauce. Adjust the consistency with more water if necessary.
  6. To assemble the burgers, place a grilled zucchini round on a plate, add a lamb patty, and top with lettuce, tomato slices, and red onion. Drizzle with tahini sauce.
  7. Finally, top with another zucchini round to complete the burger. Serve immediately.
