  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic cloves, minced - 3
  • Red bell pepper, diced - 1
  • Tomato, diced - 1 large
  • Carrot, sliced - 1 medium
  • Zucchini, sliced - 1 medium
  • Cilantro, chopped - 2 tablespoons
  • Parsley, chopped - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - ½ teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 2 tablespoons
  • Water - 200 milliliters

Steps

  1. Heat the olive oil in a tagine or a deep skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced red bell pepper, and sliced carrot. Cook for another 5 minutes until the vegetables are slightly softened.
  3. Add the diced tomato, zucchini, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Stir well and let cook for 3-4 minutes.
  4. Pour in the water and bring the mixture to a simmer. Reduce the heat to low, cover the tagine, and let it cook for 10 minutes to allow the flavors to meld.
  5. Carefully place the fish fillets on top of the vegetable mixture. Drizzle the lemon juice over the fish, cover, and cook for an additional 10-15 minutes until the fish is cooked through and flakes easily with a fork.
  6. Once cooked, remove from heat and sprinkle with chopped cilantro and parsley before serving.
