- Carrot, sliced - 1 medium
- Zucchini, sliced - 1 medium
- Cilantro, chopped - 2 tablespoons
- Parsley, chopped - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - ½ teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 2 tablespoons
- Water - 200 milliliters
Steps
- Heat the olive oil in a tagine or a deep skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced red bell pepper, and sliced carrot. Cook for another 5 minutes until the vegetables are slightly softened.
- Add the diced tomato, zucchini, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Stir well and let cook for 3-4 minutes.
- Pour in the water and bring the mixture to a simmer. Reduce the heat to low, cover the tagine, and let it cook for 10 minutes to allow the flavors to meld.
- Carefully place the fish fillets on top of the vegetable mixture. Drizzle the lemon juice over the fish, cover, and cook for an additional 10-15 minutes until the fish is cooked through and flakes easily with a fork.
- Once cooked, remove from heat and sprinkle with chopped cilantro and parsley before serving.
