- 500g firm white fish (such as cod or halibut) - cut into 2.5cm cubes
- 1 red bell pepper - cut into 2.5cm pieces
- 1 zucchini - sliced into thick rounds
- 1 red onion - cut into wedges
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 wooden skewers - soaked in water for 30 minutes
Steps
- In a bowl, mix olive oil, lemon juice, smoked paprika, cumin, coriander, cayenne pepper, salt, and pepper to create a marinade.
- Add the fish cubes, bell pepper, zucchini, and onion to the marinade, ensuring everything is well coated. Cover and let marinate for at least 15 minutes.
- Preheat the grill or a grill pan over medium-high heat.
- Thread the marinated fish and vegetables onto the soaked skewers alternately.
- Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the fish is cooked through and the vegetables are nicely charred.
- Remove from the grill and let rest for a couple of minutes before serving.
