Ingredients

  • 500g firm white fish (such as cod or halibut) - cut into 2.5cm cubes
  • 1 red bell pepper - cut into 2.5cm pieces
  • 1 zucchini - sliced into thick rounds
  • 1 red onion - cut into wedges
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 wooden skewers - soaked in water for 30 minutes

Steps

  1. In a bowl, mix olive oil, lemon juice, smoked paprika, cumin, coriander, cayenne pepper, salt, and pepper to create a marinade.
  2. Add the fish cubes, bell pepper, zucchini, and onion to the marinade, ensuring everything is well coated. Cover and let marinate for at least 15 minutes.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Thread the marinated fish and vegetables onto the soaked skewers alternately.
  5. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the fish is cooked through and the vegetables are nicely charred.
  6. Remove from the grill and let rest for a couple of minutes before serving.
