Ingredients

  • Romaine lettuce - 100 grams, chopped
  • Cucumber - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Radishes - 50 grams, thinly sliced
  • Bell pepper (red or yellow) - 100 grams, diced
  • Green onions - 2, sliced
  • Fresh parsley - 30 grams, chopped
  • Chickpeas - 100 grams, canned, rinsed and drained
  • Feta cheese - 50 grams, crumbled
  • Pita bread - 1 large, cut into triangles
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Red chili flakes - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Place the pita bread triangles on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and red chili flakes. Bake for about 10 minutes, or until golden and crispy.
  3. In a large bowl, combine the chopped romaine lettuce, cucumber, cherry tomatoes, radishes, bell pepper, green onions, parsley, and chickpeas.
  4. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and toss well to combine.
  6. Once the pita chips are ready, let them cool for a minute, then add them to the salad along with the crumbled feta cheese.
  7. Toss gently to combine everything, and serve immediately.
