Ingredients
- Romaine lettuce - 100 grams, chopped
- Cucumber - 100 grams, diced
- Cherry tomatoes - 100 grams, halved
- Radishes - 50 grams, thinly sliced
- Bell pepper (red or yellow) - 100 grams, diced
- Green onions - 2, sliced
- Fresh parsley - 30 grams, chopped
- Chickpeas - 100 grams, canned, rinsed and drained
- Feta cheese - 50 grams, crumbled
- Pita bread - 1 large, cut into triangles
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 1 clove, minced
- Red chili flakes - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Place the pita bread triangles on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and red chili flakes. Bake for about 10 minutes, or until golden and crispy.
- In a large bowl, combine the chopped romaine lettuce, cucumber, cherry tomatoes, radishes, bell pepper, green onions, parsley, and chickpeas.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss well to combine.
- Once the pita chips are ready, let them cool for a minute, then add them to the salad along with the crumbled feta cheese.
- Toss gently to combine everything, and serve immediately.
