Ingredients

  • Eggplant - 1 medium (about 250 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Pita bread - 2 pieces
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Red onion - 1/4 medium, thinly sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat dry with a paper towel.
  4. In a bowl, mix the olive oil, minced garlic, cumin, coriander, cayenne pepper, salt, and black pepper.
  5. Brush the eggplant slices with the spice mixture on both sides and place them on a baking sheet.
  6. Roast the eggplant in the oven for 20 minutes, flipping halfway through, until golden and tender.
  7. Once the eggplant is done, remove it from the oven and let it cool slightly. Then, sprinkle chickpea flour and chopped parsley over the eggplant slices and mix gently.
  8. In a small bowl, mix tahini with lemon juice until smooth. Add water if needed to reach a drizzling consistency.
  9. To assemble the burgers, place a roasted eggplant slice on each pita, top with tomato, cucumber, and red onion, and drizzle with tahini sauce.
  10. Serve immediately and enjoy your spicy eggplant burgers!
