Ingredients
- Eggplant - 1 medium (about 250 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 3 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Pita bread - 2 pieces
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Red onion - 1/4 medium, thinly sliced
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices and pat dry with a paper towel.
- In a bowl, mix the olive oil, minced garlic, cumin, coriander, cayenne pepper, salt, and black pepper.
- Brush the eggplant slices with the spice mixture on both sides and place them on a baking sheet.
- Roast the eggplant in the oven for 20 minutes, flipping halfway through, until golden and tender.
- Once the eggplant is done, remove it from the oven and let it cool slightly. Then, sprinkle chickpea flour and chopped parsley over the eggplant slices and mix gently.
- In a small bowl, mix tahini with lemon juice until smooth. Add water if needed to reach a drizzling consistency.
- To assemble the burgers, place a roasted eggplant slice on each pita, top with tomato, cucumber, and red onion, and drizzle with tahini sauce.
