Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red chili flakes - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Plain yogurt - 100g (for serving)

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and place them in a large bowl.
  3. In a separate bowl, mix together the olive oil, minced garlic, red chili flakes, ground cumin, ground coriander, salt, black pepper, and lemon juice to create a marinade.
  4. Pour the marinade over the eggplant slices and toss until they are evenly coated.
  5. Let the eggplant marinate for about 10 minutes to absorb the flavors.
  6. Place the marinated eggplant slices on the preheated grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  7. Remove the eggplant from the grill and let it rest for a few minutes.
  8. Serve the grilled eggplant warm, garnished with chopped parsley and accompanied by plain yogurt.
