- Cauliflower - 200 grams, riced
- Egg - 1 large
- Almond flour - 30 grams
- Green onion - 2 tablespoons, finely chopped
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chili flakes - 1/2 teaspoon
- Parsley - 1 tablespoon, chopped (for garnish)
- Olive oil - for frying
Steps
- Start by ricing the cauliflower. Steam or microwave the cauliflower florets until tender, then pulse in a food processor until it resembles rice.
- In a mixing bowl, combine the riced cauliflower, egg, almond flour, green onion, minced garlic, cumin, paprika, salt, black pepper, and chili flakes. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a couple of tablespoons of olive oil.
- Scoop about 2 tablespoons of the cauliflower mixture and form it into a patty. Carefully place it in the hot skillet. Repeat with the remaining mixture, making sure not to overcrowd the pan.
- Cook each fritter for about 4-5 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, remove the fritters from the skillet and place them on a paper towel to drain excess oil.
- Garnish with chopped parsley and serve hot with your favorite dipping sauce.
