Ingredients

  • Cauliflower - 200 grams, riced
  • Egg - 1 large
  • Almond flour - 30 grams
  • Green onion - 2 tablespoons, finely chopped
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Parsley - 1 tablespoon, chopped (for garnish)
  • Olive oil - for frying

Steps

  1. Start by ricing the cauliflower. Steam or microwave the cauliflower florets until tender, then pulse in a food processor until it resembles rice.
  2. In a mixing bowl, combine the riced cauliflower, egg, almond flour, green onion, minced garlic, cumin, paprika, salt, black pepper, and chili flakes. Mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a couple of tablespoons of olive oil.
  4. Scoop about 2 tablespoons of the cauliflower mixture and form it into a patty. Carefully place it in the hot skillet. Repeat with the remaining mixture, making sure not to overcrowd the pan.
  5. Cook each fritter for about 4-5 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
  6. Once cooked, remove the fritters from the skillet and place them on a paper towel to drain excess oil.
  7. Garnish with chopped parsley and serve hot with your favorite dipping sauce.
