Ingredients
- Basmati rice - 150 grams
- Water - 300 milliliters
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1
- Cardamom pods - 2, crushed
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Mixed nuts (almonds, cashews, pistachios) - 50 grams, chopped
- Raisins - 30 grams
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, cinnamon stick, crushed cardamom pods, and allspice to the pot, stirring for another 2 minutes until fragrant.
- Drain the soaked rice and add it to the pot, stirring well to coat the rice with the spices and oil for about 2 minutes.
- Pour in the water and add the salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice has absorbed all the water.
- While the rice cooks, toast the mixed nuts in a dry skillet over medium heat until golden, about 3-4 minutes, stirring frequently.
- Once the rice is cooked, remove from heat and let it stand covered for 5 minutes.
- Fluff the rice with a fork, then gently fold in the toasted nuts and raisins.
- Serve the spiced rice warm, garnished with chopped fresh parsley.
