Ingredients
- Quinoa - 150 grams
- Water - 400 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 30 grams, toasted
Steps
- Rinse the quinoa under cold water to remove any bitterness, then drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the saucepan and cook for another minute until fragrant.
- Stir in the rinsed quinoa, ground cumin, ground coriander, cinnamon, salt, and black pepper. Cook for 2-3 minutes, stirring frequently.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork.
- Stir in the chopped parsley and toasted pine nuts before serving.
