Ingredients

  • Quail - 4 small pieces (about 300g total)

  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, cumin, coriander, paprika, allspice, salt, black pepper, and lemon juice to create the marinade.
  2. Add the quail to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Remove the quail from the marinade and let any excess drip off. Discard the marinade.
  5. Grill the quail for about 5-7 minutes on each side, or until the skin is crispy and the internal temperature reaches 74°C (165°F).
  6. Once cooked, remove the quail from the grill and let rest for a few minutes.
  7. Serve garnished with chopped parsley and additional lemon wedges on the side.
