Ingredients

  • Green or brown lentils - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the lentils under cold water and drain.
  2. In a pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and diced carrot to the pot, cooking for another 3-4 minutes until softened.
  4. Stir in the rinsed lentils, cumin, coriander, paprika, salt, and pepper, mixing well.
  5. Add 500 ml of water to the pot and bring to a boil.
  6. Reduce the heat to low, cover, and let simmer for about 20 minutes, or until the lentils are tender.
  7. Once cooked, remove from heat and stir in the chopped parsley and lemon juice.
  8. Serve warm or at room temperature, garnished with extra parsley if desired.
