Ingredients
- Green or brown lentils - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and drain.
- In a pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for another 3-4 minutes until softened.
- Stir in the rinsed lentils, cumin, coriander, paprika, salt, and pepper, mixing well.
- Add 500 ml of water to the pot and bring to a boil.
- Reduce the heat to low, cover, and let simmer for about 20 minutes, or until the lentils are tender.
- Once cooked, remove from heat and stir in the chopped parsley and lemon juice.
- Serve warm or at room temperature, garnished with extra parsley if desired.
