- Green lentils - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 milliliters
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon (to taste)
- Black pepper - 1/2 teaspoon (to taste)
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pot, cooking for another 5 minutes until softened.
- Stir in the diced tomato and cook for 3-4 minutes until it begins to break down.
- Add the rinsed lentils, vegetable broth, cumin, coriander, turmeric, paprika, salt, and black pepper to the pot. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 25-30 minutes, or until the lentils are tender.
- Once cooked, remove from heat and stir in the lemon juice.
- Serve hot, garnished with fresh parsley.
