- Brown lentils - 100 grams
- Water - 1 liter
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and set them aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another minute until fragrant.
- Add the rinsed lentils and water to the pot. Bring to a boil, then reduce the heat to low and let simmer for about 25-30 minutes, or until the lentils are tender.
- Once the lentils are cooked, use an immersion blender to blend the soup to your desired consistency (smooth or chunky).
- Stir in the fresh lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
