Ingredients

  • Brown lentils - 100 grams
  • Water - 1 liter
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and set them aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
  4. Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another minute until fragrant.
  5. Add the rinsed lentils and water to the pot. Bring to a boil, then reduce the heat to low and let simmer for about 25-30 minutes, or until the lentils are tender.
  6. Once the lentils are cooked, use an immersion blender to blend the soup to your desired consistency (smooth or chunky).
  7. Stir in the fresh lemon juice and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
