- Green lentils - 150 grams
- Red bell pepper - 1 medium, diced
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic - 1 clove, minced
Steps
- Rinse the lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil and then reduce to a simmer for about 20 minutes, or until tender but not mushy.
- While the lentils are cooking, prepare the vegetables by dicing the bell pepper, cucumber, and red onion, and halving the cherry tomatoes.
- In a large bowl, combine the diced vegetables, chopped parsley, minced garlic, cumin, coriander, salt, and black pepper.
- Once the lentils are cooked, drain and let them cool slightly before adding to the bowl with the vegetables.
- Drizzle the olive oil and lemon juice over the salad, and toss gently to combine all the ingredients.
- Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
