Spiced Lentil Burger

Ingredients
- Green lentils - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Flour - 2 tablespoons (or more as needed)
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2
- Tahini sauce - for serving
- Lettuce leaves - for serving
- Tomato slices - for serving
- Cucumber slices - for serving
Steps
- Rinse the lentils under cold water and place them in a saucepan with 500 ml of water. Bring to a boil, then reduce the heat and let simmer for about 20 minutes, or until tender. Drain and let cool slightly.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until softened and fragrant, about 5 minutes.
- In a large mixing bowl, combine the cooked lentils, sautéed onion and garlic, grated carrot, cumin, coriander, paprika, salt, black pepper, and chopped parsley. Mix well.
- Gradually add flour to the lentil mixture until it holds together well; you may need more or less flour depending on moisture levels.
- Shape the mixture into 2 equal patties, about 1.5 cm thick.
- In the same skillet, heat the remaining olive oil over medium heat. Once hot, add the lentil patties and fry for about 5-6 minutes on each side, until golden brown and crispy.
- While the patties are cooking, prepare the burger buns and any desired toppings such as lettuce, tomato slices, and cucumber.
- Once cooked, assemble the burgers by placing the lentil patties on the buns, adding tahini sauce, and topping with fresh vegetables.
