  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Wooden or metal skewers - 4

Steps

  1. In a bowl, combine the minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, salt, black pepper, olive oil, chopped parsley, and lemon juice.
  2. Add the diced lamb to the marinade and mix well, ensuring all pieces are coated. Cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.
  3. Soak wooden skewers in water for 15 minutes to prevent burning (if using). Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated lamb onto the skewers, leaving a little space between each piece for even cooking.
