Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Ground lamb - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, sliced
  • Red bell pepper - 1 small, sliced
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Preheat the oven to 200°C (400°F).
  2. To prepare the cauliflower crust, steam the cauliflower florets until tender, about 10 minutes. Once cooked, drain and let cool slightly before transferring to a clean kitchen towel.
  3. Wrap the cauliflower in the towel and squeeze out as much moisture as possible.
  4. In a bowl, combine the cauliflower, egg, almond flour, and salt. Mix well until a dough forms.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 20 minutes or until golden and firm.
  7. While the crust is baking, heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  8. Add the ground lamb to the skillet, breaking it apart with a spatula. Stir in the cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook until the lamb is browned and cooked through, about 8-10 minutes.
  9. Remove the skillet from heat and stir in the chopped parsley.
  10. Once the crust is done baking, remove it from the oven. Spread the cooked lamb mixture evenly over the crust, then top with tomato slices, red bell pepper, and toasted pine nuts.
  11. Return the pizza to the oven and bake for an additional 10 minutes.
  12. Remove from the oven and let it cool slightly before slicing and serving.
