Ingredients
- Ground lamb - 300 grams
- Cauliflower - 1 medium head, grated (about 400 grams)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted (optional)
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and ground lamb to the skillet. Cook until the lamb is browned and cooked through, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix well and let the spices cook with the lamb for an additional 2 minutes.
- While the lamb is cooking, grate the cauliflower using a box grater or food processor to create 'cauliflower rice'.
- Add the grated cauliflower to the skillet and mix well with the lamb and spices. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove from heat and stir in the chopped parsley. If desired, top with toasted pine nuts before serving.
