  • Pita bread - 2 pieces
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/2 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini sauce - 4 tablespoons

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, cumin, coriander, paprika, salt, and black pepper to create a marinade.
  2. Add the fish fillets to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for 15 minutes.
  3. While the fish is marinating, prepare the vegetables by dicing the cucumber and tomato, slicing the red onion, and chopping the parsley.
  4. Preheat a grill pan or skillet over medium heat. Once hot, add the marinated fish and cook for about 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
  5. Remove the fish from the heat and let it rest for a couple of minutes before flaking it into large pieces.
  6. Warm the pita bread in a separate pan or microwave for a few seconds until pliable.
  7. Assemble the wraps by placing flaked fish on each pita, followed by diced cucumber, tomato, red onion, and a sprinkle of parsley.
  8. Drizzle tahini sauce over the top, then fold the pita around the filling and serve immediately.
