- Chickpeas - 200 grams, cooked or canned, drained
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon

- Black pepper - to taste
- Fresh parsley - a handful, chopped, for garnish
- Lemon - 1, juiced
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced red bell pepper, carrot, and zucchini. Cook for another 5-7 minutes until the vegetables begin to soften.
- Add the diced tomatoes, vegetable broth, chickpeas, cumin, coriander, paprika, cinnamon, salt, and black pepper. Stir well to combine.
- Bring the mixture to a gentle boil, then reduce the heat and simmer for 15-20 minutes, allowing the flavors to meld.
- Once the stew is thickened and the vegetables are tender, stir in the lemon juice and adjust seasoning if necessary.
