Ingredients

  • Eggplant - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cauliflower rice - 300 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Cut the eggplant into small cubes and place them in a bowl.
  3. Drizzle the olive oil over the eggplant cubes and add the minced garlic, cumin, coriander, paprika, salt, and black pepper. Toss to coat evenly.
  4. Spread the seasoned eggplant on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and golden, stirring halfway through.
  5. While the eggplant is roasting, heat a non-stick skillet over medium heat and add the cauliflower rice.
  6. Cook the cauliflower rice for about 5-7 minutes, stirring occasionally, until tender.
  7. Once the eggplant is done roasting, combine it with the cooked cauliflower rice in the skillet.
  8. Add the lemon juice and chopped parsley, stirring well to combine all ingredients.
  9. Serve warm, garnished with additional parsley if desired.
