- Eggplant - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cauliflower rice - 300 grams
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (390°F).
- Cut the eggplant into small cubes and place them in a bowl.
- Drizzle the olive oil over the eggplant cubes and add the minced garlic, cumin, coriander, paprika, salt, and black pepper. Toss to coat evenly.
- Spread the seasoned eggplant on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and golden, stirring halfway through.
- While the eggplant is roasting, heat a non-stick skillet over medium heat and add the cauliflower rice.
- Cook the cauliflower rice for about 5-7 minutes, stirring occasionally, until tender.
- Once the eggplant is done roasting, combine it with the cooked cauliflower rice in the skillet.
- Add the lemon juice and chopped parsley, stirring well to combine all ingredients.
- Serve warm, garnished with additional parsley if desired.
