Ingredients
- Chicken thighs - 4 pieces (approx. 600g)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, mix the minced garlic, ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, olive oil, and lemon juice to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
- Heat a large skillet over medium-high heat and add a splash of olive oil.
- Once the oil is hot, add the marinated chicken thighs skin-side down and sear for about 5-7 minutes until golden brown.
- Flip the chicken thighs and reduce the heat to medium. Cook for another 10-12 minutes, or until the internal temperature reaches 75°C (165°F).
- Remove the chicken from the skillet and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
