Ingredients
- Chicken thighs - 300 grams
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken broth - 400 ml
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted
Steps
- In a bowl, combine the chicken thighs with olive oil, garlic, cinnamon, allspice, cumin, paprika, salt, and black pepper. Massage the marinade into the chicken and let it sit for at least 15 minutes.
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the marinated chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
- Once the chicken is browned, remove it from the pot and set it aside. In the same pot, add the basmati rice and stir for 1-2 minutes to toast the grains.
- Pour in the chicken broth and bring to a boil. Return the chicken to the pot, cover, and reduce the heat to low. Simmer for 20 minutes or until the rice has absorbed the liquid and is tender.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then serve the chicken over the rice, garnished with chopped parsley and toasted pine nuts.
