Ingredients
- Chicken breast - 300 grams
- Zucchini - 2 medium (about 400 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zucchini noodles and set aside.
- In a bowl, combine the chicken breast with paprika, cumin, cinnamon, salt, pepper, and lemon juice. Mix well to coat the chicken evenly.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic to the skillet and sauté for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- While the chicken is cooking, heat the remaining 1 tablespoon of olive oil in another pan over medium heat. Add the zucchini noodles and sauté for 3-4 minutes until they are slightly tender but still firm.
- Once the chicken is cooked, combine it with the sautéed zucchini noodles in the skillet. Toss well to combine and heat through for 1-2 minutes.
- Remove from heat, garnish with chopped fresh parsley, and serve immediately.
