Ingredients

  • Chicken breast - 300 grams
  • Zucchini - 2 medium (about 400 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zucchini noodles and set aside.
  2. In a bowl, combine the chicken breast with paprika, cumin, cinnamon, salt, pepper, and lemon juice. Mix well to coat the chicken evenly.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic to the skillet and sauté for an additional 1 minute until fragrant.
  5. Increase the heat to medium-high and add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  6. While the chicken is cooking, heat the remaining 1 tablespoon of olive oil in another pan over medium heat. Add the zucchini noodles and sauté for 3-4 minutes until they are slightly tender but still firm.
  7. Once the chicken is cooked, combine it with the sautéed zucchini noodles in the skillet. Toss well to combine and heat through for 1-2 minutes.
  8. Remove from heat, garnish with chopped fresh parsley, and serve immediately.
