Ingredients
- Cauliflower - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Remove the leaves and stem from the cauliflower, and cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for 1-2 minutes to toast the spices.
- Add the riced cauliflower to the skillet and stir well to combine with the spices and onion mixture.
- Cover the skillet and cook for about 10 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Remove from heat, stir in the chopped parsley and lemon juice, and fluff with a fork before serving.
