Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the leaves and stem from the cauliflower, and cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for 1-2 minutes to toast the spices.
  6. Add the riced cauliflower to the skillet and stir well to combine with the spices and onion mixture.
  7. Cover the skillet and cook for about 10 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  8. Remove from heat, stir in the chopped parsley and lemon juice, and fluff with a fork before serving.
