- Cauliflower - 300 grams, cut into florets

- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Radishes - 4, thinly sliced
- Cucumber - 1 small, diced
- Tomato - 1 medium, diced
- Parsley - 2 tablespoons, chopped
- Mint leaves - 1 tablespoon, chopped
- Lemon juice - 2 tablespoons
- Sumac - 1 teaspoon (optional)
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, toss the cauliflower florets with olive oil, ground cumin, ground coriander, paprika, salt, and black pepper until evenly coated.
- Spread the seasoned cauliflower on a baking sheet in a single layer and roast for 20 minutes, or until golden and tender, flipping halfway through.
- While the cauliflower is roasting, prepare the salad by combining the sliced radishes, diced cucumber, diced tomato, chopped parsley, and chopped mint in a large bowl.
- In a small bowl, whisk together the lemon juice and sumac, if using. Pour this dressing over the salad and toss to combine.
- Once the cauliflower is done, let it cool slightly before adding it to the salad. Toss everything together gently.
- Serve immediately or chill for 15 minutes for the flavors to meld.
