Ingredients

  • Cauliflower - 1 medium head (about 500g)
  • Ground beef - 250g
  • Onion - 1 small (about 100g), finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Begin by removing the leaves and stem from the cauliflower and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Add minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  5. Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.
  6. Stir in the cumin, cinnamon, allspice, paprika, salt, and black pepper. Mix well to combine all spices with the meat.
  7. Add the processed cauliflower rice to the skillet, mixing it thoroughly with the beef and spices. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  8. Taste and adjust seasoning if necessary. Remove from heat and garnish with chopped fresh parsley before serving.
