Ingredients
- Cauliflower - 1 medium head (about 500g)
- Ground beef - 250g
- Onion - 1 small (about 100g), finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Begin by removing the leaves and stem from the cauliflower and cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- Stir in the cumin, cinnamon, allspice, paprika, salt, and black pepper. Mix well to combine all spices with the meat.
- Add the processed cauliflower rice to the skillet, mixing it thoroughly with the beef and spices. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Taste and adjust seasoning if necessary. Remove from heat and garnish with chopped fresh parsley before serving.
