- Shrimp - 300 grams, peeled and deveined
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Water - 400 milliliters
- Fresh parsley - 2 tablespoons, chopped for garnish
- Lemon - 1, cut into wedges for serving
Steps
- Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced tomato, cumin, paprika, cinnamon, salt, and black pepper. Cook for about 3-4 minutes until the tomatoes soften.
- Add the shrimp to the pan and cook for about 3-4 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- In the same pan, add the basmati rice and stir to coat in the remaining mixture. Cook for 1-2 minutes to slightly toast the rice.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed.
- Once the rice is cooked, fluff it with a fork and gently fold in the cooked shrimp.
- Serve the shrimp and rice mixture on plates, garnished with chopped parsley and lemon wedges on the side.
