Ingredients
- Shrimp (peeled and deveined) - 300 grams
- Cauliflower (riced) - 200 grams
- Pine nuts - 30 grams
- Red onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Fresh mint (chopped) - 1 tablespoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a food processor, combine the shrimp, riced cauliflower, red onion, garlic, parsley, mint, cumin, paprika, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
- Form the mixture into small patties or kebbeh shapes, about 5 cm in diameter.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the pine nuts and toast them until golden brown, then remove and set aside.
- In the same skillet, add the remaining olive oil and cook the shrimp patties for about 3-4 minutes on each side, or until they are cooked through and golden brown.
- Drizzle with lemon juice and garnish with toasted pine nuts before serving.
