Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Cucumber (diced) - 1/2 medium
  • Tomato (diced) - 1 medium
  • Radishes (sliced) - 4
  • Red onion (thinly sliced) - 1/4 medium
  • Parsley (chopped) - 1/4 cup
  • Mint leaves (chopped) - 2 tablespoons
  • Lettuce (torn) - 1 cup
  • Pita bread (toasted and broken) - 1 small piece
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the shrimp and season with salt, black pepper, and half of the sumac. Cook for 3-4 minutes until the shrimp are pink and opaque, then remove from heat.
  3. In a large bowl, combine the diced cucumber, tomato, sliced radishes, and red onion.
  4. Add the chopped parsley and mint leaves to the bowl, mixing gently to combine.
  5. In a small bowl, whisk together the remaining olive oil, lemon juice, and the rest of the sumac.
  6. Pour the dressing over the salad mixture and toss to coat evenly.
  7. Add the torn lettuce and cooked shrimp to the salad, mixing gently again.
  8. Top with broken pieces of toasted pita bread just before serving.
