Ingredients

  • Chicken thighs - 300 grams, skinless and boneless
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Chicken broth - 750 ml, low-sodium
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced carrot and celery, cooking for 5 minutes until slightly softened.
  4. Add the chicken thighs to the pot, along with the cumin, paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
  6. Add the diced zucchini and spinach to the pot, and continue to simmer for another 10 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Remove the chicken thighs from the pot, shred the meat, and return it to the soup.
  8. Stir in the chopped cilantro and lemon juice, adjusting seasoning as needed. Serve hot.
