Ingredients
- Chicken thighs - 300 grams, skinless and boneless
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Spinach - 100 grams, fresh
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Chicken broth - 750 ml, low-sodium
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced carrot and celery, cooking for 5 minutes until slightly softened.
- Add the chicken thighs to the pot, along with the cumin, paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
- Pour in the chicken broth and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
- Add the diced zucchini and spinach to the pot, and continue to simmer for another 10 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the chicken thighs from the pot, shred the meat, and return it to the soup.
- Stir in the chopped cilantro and lemon juice, adjusting seasoning as needed. Serve hot.
