- Greek yogurt - 250 grams
- Chicken or vegetable broth - 500 ml
- Garlic - 2 cloves, minced

- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- In a pot, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Pour in the chicken or vegetable broth and bring to a gentle simmer.
- In a mixing bowl, whisk together the Greek yogurt, lemon juice, cumin, salt, and black pepper until smooth.
- Gradually add a ladle of the hot broth to the yogurt mixture, whisking constantly to temper the yogurt and prevent curdling.
- Once combined, slowly pour the yogurt mixture back into the pot with the remaining broth, stirring continuously.
- Add the chopped fresh mint and let the soup simmer for an additional 5 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot, garnished with extra mint leaves if desired.
