Ingredients

  • Greek yogurt - 250 grams
  • Chicken or vegetable broth - 500 ml
  • Garlic - 2 cloves, minced
  • Fresh mint - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a pot, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Pour in the chicken or vegetable broth and bring to a gentle simmer.
  3. In a mixing bowl, whisk together the Greek yogurt, lemon juice, cumin, salt, and black pepper until smooth.
  4. Gradually add a ladle of the hot broth to the yogurt mixture, whisking constantly to temper the yogurt and prevent curdling.
  5. Once combined, slowly pour the yogurt mixture back into the pot with the remaining broth, stirring continuously.
  6. Add the chopped fresh mint and let the soup simmer for an additional 5 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with extra mint leaves if desired.
