Ingredients

  • Zucchini - 2 medium (about 300g)
  • Ground lamb or beef - 200g
  • Onion - 1 small (about 100g), finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Chicken or beef broth - 500ml
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon (optional)

Steps

  1. Heat olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and ground meat to the pot. Cook until the meat is browned, breaking it apart with a spoon, about 5-7 minutes.
  3. Stir in the tomato paste, cumin, cinnamon, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
  4. Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes.
  5. While the soup is simmering, wash the zucchinis and cut off the ends. Dice them into small cubes or slice them into half-moons.
  6. Add the chopped zucchini to the pot and simmer for an additional 5-7 minutes, until the zucchini is tender.
  7. Stir in the fresh parsley and adjust seasoning if needed. If desired, add lemon juice for brightness.
  8. Serve hot, garnished with additional parsley if desired.
