- Zucchini - 2 medium (about 300g)
- Ground lamb or beef - 200g
- Onion - 1 small (about 100g), finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Chicken or beef broth - 500ml
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon (optional)
Steps
- Heat olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and ground meat to the pot. Cook until the meat is browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the tomato paste, cumin, cinnamon, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
- Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes.
- While the soup is simmering, wash the zucchinis and cut off the ends. Dice them into small cubes or slice them into half-moons.
- Add the chopped zucchini to the pot and simmer for an additional 5-7 minutes, until the zucchini is tender.
- Stir in the fresh parsley and adjust seasoning if needed. If desired, add lemon juice for brightness.
- Serve hot, garnished with additional parsley if desired.
