- Zucchini - 300 grams, diced
- Greek yogurt - 150 grams
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Fresh mint - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Cilantro - 1 tablespoon, chopped (for garnish)
Steps
- In a pot, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the diced zucchini and sauté for another 5-7 minutes until they begin to soften.
- Pour in the vegetable broth and add salt and black pepper. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
- Remove the pot from heat and let it cool slightly before adding the Greek yogurt and lemon juice. Blend until smooth using an immersion blender or in a regular blender.
- Return the blended soup to the pot and gently heat it through, stirring in the chopped mint.
- Serve hot, garnished with chopped cilantro.
