Ingredients

  • Zucchini - 300 grams, diced
  • Greek yogurt - 150 grams
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh mint - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Cilantro - 1 tablespoon, chopped (for garnish)

Steps

  1. In a pot, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  2. Add the diced zucchini and sauté for another 5-7 minutes until they begin to soften.
  3. Pour in the vegetable broth and add salt and black pepper. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
  4. Remove the pot from heat and let it cool slightly before adding the Greek yogurt and lemon juice. Blend until smooth using an immersion blender or in a regular blender.
  5. Return the blended soup to the pot and gently heat it through, stirring in the chopped mint.
  6. Serve hot, garnished with chopped cilantro.
