- Zucchini - 400 grams, diced
- Chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 250 ml
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cumin to the pot, cooking for an additional 1-2 minutes until fragrant.
- Stir in the diced zucchini and cook for 5 minutes, allowing them to soften slightly.
- Pour in the chicken broth and water, then add salt and black pepper. Bring the mixture to a boil.
- Reduce the heat and let it simmer for about 15 minutes, or until the zucchini is tender.
- Remove the pot from heat and stir in the lemon juice and chopped cilantro.
- Using an immersion blender, puree the soup until smooth, or transfer to a blender in batches.
- Serve hot, garnished with additional cilantro if desired.
