Ingredients

  • Zucchini - 400 grams, diced
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 250 ml

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cumin to the pot, cooking for an additional 1-2 minutes until fragrant.
  3. Stir in the diced zucchini and cook for 5 minutes, allowing them to soften slightly.
  4. Pour in the chicken broth and water, then add salt and black pepper. Bring the mixture to a boil.
  5. Reduce the heat and let it simmer for about 15 minutes, or until the zucchini is tender.
  6. Remove the pot from heat and stir in the lemon juice and chopped cilantro.
  7. Using an immersion blender, puree the soup until smooth, or transfer to a blender in batches.
  8. Serve hot, garnished with additional cilantro if desired.
