- Lamb shoulder, cubed - 300 grams
- Olive oil - 2 tablespoons
- Onion, chopped - 1 medium (about 150 grams)
- Garlic, minced - 3 cloves
- Carrot, diced - 1 medium (about 70 grams)
- Celery, diced - 1 stalk (about 50 grams)
- Zucchini, diced - 1 medium (about 150 grams)
- Tomato paste - 2 tablespoons
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Add the cubed lamb shoulder to the pot and brown on all sides for about 5-7 minutes.
- Stir in the diced carrot, celery, and zucchini, cooking for another 3-4 minutes until the vegetables begin to soften.
- Add the tomato paste, cumin, coriander, cinnamon, salt, and black pepper. Mix well to coat the meat and vegetables with the spices.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot.
- Simmer for about 30 minutes, or until the lamb is tender and the flavors meld together.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
