Ingredients

  • Lamb shoulder, cubed - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, chopped - 1 medium (about 150 grams)
  • Garlic, minced - 3 cloves
  • Carrot, diced - 1 medium (about 70 grams)
  • Celery, diced - 1 stalk (about 50 grams)
  • Zucchini, diced - 1 medium (about 150 grams)
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  2. Add the cubed lamb shoulder to the pot and brown on all sides for about 5-7 minutes.
  3. Stir in the diced carrot, celery, and zucchini, cooking for another 3-4 minutes until the vegetables begin to soften.
  4. Add the tomato paste, cumin, coriander, cinnamon, salt, and black pepper. Mix well to coat the meat and vegetables with the spices.
  5. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot.
  6. Simmer for about 30 minutes, or until the lamb is tender and the flavors meld together.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
